Healthy Apple Pie Recipe - Completely Vegan!
The smell of freshly baked cakes and apple pie on the table is the marker of a cosy home and a good host. But what do you do if you, or the person who is coming for tea, is a vegan? Normal cakes with eggs, butter, milk or cream aren’t suitable of course. But there are some brilliant alternatives. We want to share with you a recipe for an amazing vegan apple pie. It’s so delicious that even non-vegans write the recipe in their notebook for favourite recipes.
For the filling:
300g apples
130g coconut caramel
4g ground cinnamon
Pinch of ground nutmeg
For the coconut caramel:
170ml coconut milk
30g coconut oil
20g coconut sugar
130ml water
160g maple syrup
5g salt
For the pastry:
125g wholewheat flour
60g rice flour
30g olive oil
90ml water
pinch of salt
Recipe
- For the pastry: mix all the dry ingredients. Bring the dough together with the water, olive oil. Divide the pastry into 2 parts. Roll out one to make the base and the other part to make the lattice.
- For the coconut caramel: in a saucepan mix together the sugar and water. Boil until it’s a dark colour then add the rest of the ingredients and cook for another 10 minutes on a medium heat.
- For the filling: peel and core the apples and chop into cubes. Mix with the cinnamon, nutmeg and coconut caramel.
- Put the pastry base in a baking dish lined with parchment. Pour in the filling, then put on the strips of the remaining dough to make the lattice.
- Bake the pie in a preheated oven at 180 °C for about an hour.
