Red Smoothie with Cinnamon
Ingredients for 2 servings:

  • 1 small fresh beetroot
  • 1 ripe avocado
  • 1 handful of fresh baby spinach
  • 1 ripe banana
  • 1 handful of almonds (unpeeled, soaked for 8 hours)
  • 1 pinch of ground cinnamon
  • 1 pinch of coconut oil
  • 1/2 tsp honey
  • 500 ml water

Preparation:

  1. Soak the almonds for 8 hours, preferably overnight. Drain and rinse them.
  2. Thoroughly clean the beetroot (using a vegetable brush), remove the root end, and cut it into chunks. Cut the avocado and banana into chunks as well.
  3. Add the beetroot, avocado, banana, and remaining ingredients to a blender. Pour in 500 ml of (filtered) water. Blend until creamy. Add more water if needed.
  4. Pour into two glasses and garnish with mint or coconut flakes. Alternatively, store in a sealed glass bottle in the fridge for up to two days.
